Blueberry Oatmeal Blender Pancakes
- 2 cup rolled oats
- 1 1/4 cup unsweetened almond
- 1 banana (brown/ripe)
- 1 tsp baking powder
- 1 Tbs ground flax
- 1 tsp cinnamon
- 1 cup blueberries (frozen)
- Heat a cast-iron skillet over medium low heat.
- Add all ingredients except blueberries to a blender. Blend for 30-60 seconds until ingredients are well combined.
- Brush the skillet with oil (can also use butter/vegan butter) and pour in desired amount of batter to make pancakes.
- Top each with blueberries. Cook for 1-2 minutes (or until browned) then flip, repeating on the second side.
- Top pancakes with additional banana slices, blueberries, nut butter and/or a drizzle of maple syrup!
